The dark fruitcake characters of the Late Harvest Fortified Shiraz have been developed through significant berry shrivel resulting in acid reduction and sugar build up. The berries were open fermented until the desired level of residual sugar was reached. Fermentation was stopped by the addition of pure brandy spirit.
The deep inky red colour holds promise of well ripened fruit. The aromas are of cherries, violets, blackberries, plums and fine chocolaty oak. The palate is a mouth filling melange of sweet mulberry, black currants and cherries with excellent firm acidity. The use of French and Hungarian barriques, reveal delightful nutty chocolaty toasty characters with a surprising hint of vanilla. Tannins are quite silky and add weight to this exceptional wine. A great wine, proof once again of Margaret River’s ability to
produce world class Cabernets.
