Churchview Estate 2007 Late Harvest Dessert Shiraz

The dark fruitcake characters of the Late Harvest Fortified Shiraz have been developed through significant berry shrivel resulting in acid reduction and sugar build up. The berries were open fermented until the desired level of residual sugar was reached. Fermentation was stopped by the addition of 10 year old brandy.

The result is an intense dessert Shiraz, quite sweet but not cloying, definitely chocolaty and eastern spices such as cloves, nutmeg, cinnamon and black pepper. Ideal after dinner with dark chocolate, black espresso coffee and blue cheese.
